Japanese Milk Bread

Shokupan — the pillowy, faintly sweet loaf that tears into feathery strands. We bake it with the traditional tangzhong method, in small batches, the morning of delivery.

What is Japanese milk bread?

Japanese milk bread, or shokupan, is an enriched white loaf built for softness. It is milkier and only just sweet — the kind of bread that is wonderful plain, extraordinary toasted, and impossible to eat only one slice of.

Unlike a standard sandwich loaf, shokupan is made with a cooked flour-and-milk paste called tangzhong, which changes the crumb entirely.

Why the tangzhong method makes it softer

Cooking flour with liquid lets the starches absorb far more moisture than they otherwise could. That extra hydration is locked into the dough, which means a loaf that bakes up taller, stays tender for days longer, and pulls apart in soft strands instead of crumbling.

How we bake it

1. The tangzhong

A small portion of the flour and milk is cooked into a soft paste before mixing. It sounds fussy. It is the whole secret.

2. A slow, enriched dough

Butter, milk and egg are worked in gradually so the gluten stays silky rather than tight.

3. A gentle shaping

The dough is rolled, coiled and nestled into the pan so it bakes with that signature feathery pull-apart crumb.

4. A low, patient bake

Baked just until the top is barely golden, so the loaf stays pale, soft and cloud-light.

Storage & Freezing Instructions

Room Temperature

Keep the loaf tightly wrapped or stored in an airtight container at room temperature. For best quality, enjoy while fresh.

Freezing

Japanese Milk Bread can be frozen to extend its freshness. For best results:

  • Allow the loaf to cool completely before freezing.
  • Freeze the loaf whole or pre-slice it for easier serving.
  • Wrap the bread tightly in plastic wrap or another freezer-safe wrapping.
  • Place the wrapped bread inside a freezer-safe bag or airtight freezer container.
  • Remove as much excess air as possible before sealing.
  • Label the package with the freezing date.
  • For best quality, use frozen bread within approximately 2–3 months.

Thawing

To thaw an entire loaf, remove it from the freezer and allow it to thaw while still wrapped at room temperature. Individual slices can be removed as needed and allowed to thaw at room temperature or gently reheated. For the best soft texture, the bread may be warmed briefly before serving.

Important

Do not refrigerate the bread for routine storage unless necessary, because refrigeration can cause bread to stale and dry out faster.
